Sticky Toffee Pudding

The biggest recipe on the site. Dates get pureed and folded into a sponge baked at 190°C, then covered in a banana caramel sauce made by blitzing ripe bananas into butter and two types of sugar. This is the BSK restaurant version, not the steamed one from Ultimate Home Cooking.

Bread and Butter Pudding

Ramsay’s version from the Ultimate Cookery Course uses pain au chocolat instead of white bread, soaked in a custard made with 6 whole eggs, cinnamon and demerara sugar, then glazed with warm apricot jam straight from the oven. He also makes a Cointreau and baguette version in Sunday Lunch.

Rice Pudding

Nothing like the school dinner version. Ramsay toasts cardamom, cloves and cinnamon in the dish first, then simmers the rice in coconut milk and whole milk before folding through mascarpone and egg yolks. Goes into the oven for 15 minutes with lime zest on top. Inspired by chai tea he had in India.

Christmas Pudding

Not the heavy dark fruit pudding most people expect. Ramsay’s version from Christmas with Gordon is a light steamed sponge with maple syrup, orange zest and bay leaves, steamed for 1½ hours. He filmed it with his mum on YouTube.

Apple Pudding

His modern take on Eve’s pudding from Sunday Lunch. Braeburn apples caramelised in butter and demerara sugar, sultanas soaked in Calvados, topped with a lemon sponge and flaked almonds. He went head-to-head with his mum on The F Word, each making their own version.

Summer Pudding

The only pudding on this list that doesn’t need an oven. Brioche dipped in crème de cassis and berry juice, layered with mixed berries, pressed under a weight overnight and turned out cold. From Great British Pub Food. The darkest, most intensely fruity pudding Ramsay makes.
