The Best Flank Steak Marinade

Flank steak is one of the most flavourful cuts of beef, but it is lean and can be tough without the right preparation. A good marinade softens the surface, adds moisture, and builds a flavour layer that complements the strong beefy taste. The best flank steak marinade balances acid, oil, salt, and aromatics.

This is the cut Gordon Ramsay often uses for quick weeknight meals because it cooks fast and slices beautifully against the grain. I use it for everything from fajitas to salad bowls, and the marinade below is the one I keep coming back to.

The Marinade

3 tablespoons soy sauce, 2 tablespoons olive oil, juice of 1 lime, 2 crushed garlic cloves, 1 teaspoon smoked paprika, 1 teaspoon brown sugar, black pepper. Mix everything in a bowl or bag, add the flank steak, and refrigerate for 2 to 8 hours. The soy sauce provides the salt that penetrates deep into the meat. The lime juice tenderises the surface. The brown sugar helps build a caramelised crust during cooking.

How Long to Marinate Flank Steak

Minimum 2 hours. Ideal 6 to 8 hours. Maximum 24 hours. Flank is thin enough that the marinade works quickly, but it is also lean enough to handle a longer soak without going mushy. Always marinate in the fridge, never at room temperature.

How to Cook Flank Steak

Pat the steak dry after removing from the marinade. A wet surface steams instead of searing. Heat a cast iron pan or grill until smoking hot. Cook for 3 to 4 minutes per side for medium-rare. Rest for 5 minutes, then slice thinly against the grain. This is essential. Cutting with the grain makes flank steak chewy. Against the grain, it is tender.
